What is the smell in the cow milk?
Garlic in pastures
It’s April and the cows are officially out to pasture. With that, they have access to all the fresh new grass including any garlic and wild onions that they may find. These serve as a good tonic for the cows, but may cause their milk to have a different/odd smell that you’re definitely not used to!! The side effects are really just the smell and thankfully it doesn’t affect the flavor. We typically notice the onion/garlic smell in the Spring or early Summer, so rest assured it will not be in every batch of milk you get in the Springtime.
Wild onions are found along the fence row and trees and grow primarily in the Spring. They are an edible perennial weed, commonly found in our pastures.
While this is the most pronounced seasonal nuance in 100% grass-fed raw milk, you may notice. There may be some other small seasonal changes throughout the year. I would encourage you to embrace these seasonal changes as the uniqueness of real food, fresh from the farm. This milk is still highly prized, delicious and high in fat. This is really the best time of the year to enjoy your fresh raw milk!!
Rich, creamy spring butter, known for it’s high levels of beta-carotene, will be coming soon!!
But for now, join me in cheers to a cup of cold raw milk!!
