Lamb Leg Chops with fresh herbs and garlic
Ingredients
1 Tbsp ghee or avocado oil
2 cloves garlic, minced
1 Tbsp fresh rosemary, finely chopped
1 Tbsp fresh thyme leaves
½ tsp black pepper
2 Tbsp A2A2 raw unsalted butter
Instructions
Prep the meat: Remove the lamb chops from the fridge 20 minutes before cooking. Pat them completely dry with a paper towel
Season: In a small bowl, mix the garlic, rosemary, thyme, salt, pepper, olive oil. rub evenly over both sides of the lamb chops. Allow to marinate for at least an hour.
Sear: Heat a large oven safe skillet over high heat. Once it starts smoking hot, add the chops. Sear for 3-4 minutes until a deep brown crust forms
Flip and baste: Flip the chops and drop the heat to medium. Add the butter to the pan, As it melts, spoon the foaming butter over the meat. Cook for another 2-3 minutes for medium rare. Internal temp of 135 degrees.
Rest: Transfer the warm chops to a plate and pour any remaining juices over them. Cover loosely and rest for 5 minutes. Serves 4
